Chicken caesar salad

A classic staple on many restaurant menus, the combination of tender shredded chicken, crispy bacon, flaky parmesan and crunchy croutons drizzled with a creamy Caesar dressing is unbeatable.

Method

1.Preheat oven to 180°C (160°C fan-forced).
2.Make caesar dressing: Blend or process ingredients until all smooth.
3.Remove crusts from bread and discard. Cut bread into 2cm squares. Toss with oil in a medium bowl. Place on oven tray in a single layer. Toast 10 minutes or until golden. Cool on tray.
4.Meanwhile, cook bacon in small frying pan over medium heat, stirring, until crisp. Drain on absorbent paper.
5.Combine chicken, bacon, croutons, dressing and lettuce in a large bowl. Add green onions and cheese. Toss to combine. Divide salad among shallow bowls.

Not suitable to freeze or microwave. You will need 1 large barbecue chicken for this recipe.
