Tomato smash
Prepare the tomatoes by coring the larger ones and slicing, halving and leaving the smaller ones whole.
Dressing
In a large bowl, whisk the dressing ingredients until well combined. Season with salt and pepper, and extra lemon juice to taste.
Add the tomatoes to thedressing and toss until they are coated. Use your hands to gently squeeze the mixtureso that some of the tomatoes are crushed.
Feta whip
Make the feta whip using a hand or wand blender to mix all the ingredients until they are smooth and creamy.
To serve
Serve the tomatoes on buttered toast, topped with a generous dollop of feta whip.
