Method
1.Spray a saucepan with olive oil spray and heat on medium. Cook onion, 3 minutes, stirring, until soft.
2.Stir in potato. Add stock and 2 cups water, bring to boil. Reduce heat to low and simmer, 5 minutes. Add zucchini and chopped tarragon. Simmer, 5 minutes.
3.Using a hand blender, blend until smooth. Season to taste.
4.Serve scattered with extra tarragon and a grinding of pepper, if you like.
