Method
1.Preheat oven to 200°C. Place onion slices on a baking sheet lined with baking paper and coat with half of oil. Season with salt. Roast, 30 minutes. Turn onion slices over and cook, another 10 minutes, until tender and edges are browned.
2.Transfer to a heated platter, scatter with cheese and drizzle with remaining oil and vinegar. Sprinkle with walnuts and chives.
3.Serve with crusty bread, if you like.
This dish makes a great light lunch or first course dish for a dinner party.
