Method
1.Sift flour and salt together into a large bowl. Make a well in centre of flour. Whisk in beer and water gradually to form a smooth batter.
2.Heat oil in a large saucepan until a cube of bread sizzles as soon as it is added.
3.Dip cauliflower into batter, draining off excess. Deep-fry cauliflower, in batches, 2-3 minutes each batch, or until golden brown. Drain on paper towel.
4.To make yoghurt mustard, combine all ingredients in a small bowl.
5.Serve cauliflower with yoghurt mustard.
The batter can made in a food processor or blender if preferred.
