1.Preheat oven to hot, 200°C.
2.In a large bowl, toss potatoes with half the oil and season to taste. Divide evenly between 2 baking trays. Bake for 25-30 minutes, turning halfway through cooking.
3.Meanwhile, coat chicken in flour, shaking off excess. Whisk milk and egg together in a shallow bowl. Dip chicken into this and then into crumbs, pressing firmly. Chill for 15 minutes.
4.Heat remaining oil and butter in a large frying pan on medium. Cook chicken in 2 batches, for 2-3 minutes each side until golden. Bake for 5 minutes until cooked through. Slice into strips.
5.Serve wedges and schnitzel in paper boxes with lemon wedges.
