Method

1.Preheat oven to very hot, 220°C. Line 2 oven trays with baking paper.
2.Cut pastry into six 8cm x 12cm strips. Score a 1cm border around the edge of each pastry and prick the centre. Place on trays and bake 6-8 minutes, until puffed and golden.
3.Top each evenly with avocado, cheese, tomato and prosciutto. Season to taste and serve.

Look for mature, firm avocados and allow them to ripen at room temperature for 4-5 days. Store ripe avocados in the fridge and use within 2-3 days. easy
