Method
1.Preheat oven to 160°C (140°C fan-forced). Grease and line a 26 x 16cm (base measurement) slice pan with baking paper, extending on long sides for handles. Rinse noodles under hot water to separate strands.
2.Bring a saucepan of water to the boil; reduce to a simmer. Steam kumara in a basket saucepan for 7 minutes. Add broccoli; steam together further 3 minutes. Transfer to a large heatproof bowl. Add noodles, capsicum and onion to steamed vegetables; toss to combine.
3.Spread vegetables over base of prepared pan. Whisk eggs, cream and half the cheese in a large jug. Pour over vegetables in pan; stir to distribute evenly.
4.Top with remaining cheese and sesame seeds. Bake 50-55 minutes, or until golden brown and just set. Stand 15 minutes. Cut into pieces to serve.
To save time, you can microwave kumara and broccoli. Microwave kumara on high for 2 minutes. Add broccoli; microwave further 1-2 minutes, or until vegetables are tender.
