Method
1.Soak noodles in warm water for 20 minutes. Drain. Add to a bowl of boiling water. Stir quickly, drain again and set aside to keep warm. In a small jug, combine cornflour and half of oyster sauce with water.
2.Heat oil in a wok on high. Stir-fry prawns and garlic for 1 minute, until pink. Remove from pan. Stir-fry wombok, cover for 30 seconds and stir again. Return prawns with cornflour mixture and toss. Remove from heat.
3.Combine light soy sauce, sesame oil and remaining oyster sauce in a bowl. Add noodles and toss together using chopsticks. Spoon prawns and wombok over noodles and top with green onion. Serve with a small bowl of chilli sauce mixed with a little soy sauce, if you like.
Stir 1/4 teaspoon each of sugar and salt and 1 teaspoon sesame oil through raw prawns to enhance their texture when they are cooked.
