Method

1.Place mayonnaise in a small bowl. Fold through tuna and eschalots. Stir in lemon juice and season to taste.
2.Spread tuna mixture over each slice of bread. Cover four slices with watercress and top each of these with two slices of bread, tuna side down. Remove crusts and cut each into three fingers.
