Method
1.Preheat the oven to 220°C and line a baking dish with baking paper.
2.Add eggs, flour, milk, garlic, half the feta and a good pinch of sea salt and pepper to a blender or food processor. Blend until smooth.
3.Layer courgette slices, spring onion and ham in a baking tray. Pour egg mix over the vegetables and sprinkle with remaining feta.
4.Scatter with thyme and red onion, drizzle with olive oil and add an extra sprinkle of sea salt and black pepper.
5.Bake in the oven for 20 minutes or until golden brown and puffed up around the edges.
6.Remove from the oven, and leave to cool slightly before slicing into squares.
