Method

1.Preheat oven to 180°C or 160°C fan-forced. Heat oil in pan and cook onions for 5 minutes over medium heat until translucent.
2.Add potatoes to pan and cook gently for 10 minutes. Remove from pan and drain excess oil.
3.Beat eggs in bowl. Add potato and onion mixture to eggs, then add chorizo, ham and garlic. Season well with salt and pepper.
4.Wipe out pan with paper towel and place over high heat. Add egg mixture and press down with spoon to distribute evenly. Cook over medium heat for 5 minutes. Place in oven and cook for about 25 minutes, until tortilla is nicely browned and set in the middle.
5.Meanwhile, make salad. Toss tomatoes and beans together, then drizzle with oil and balsamic. Season with salt and pepper.
6.Remove tortilla from oven and leave for 5 minutes. Using flat plate, invert to release from pan. Cut into wedges, sprinkle with pepper and serve with salad.
