1.Preheat oven to 180°C. Bake cubed bread for 5-10 minutes until golden. Leave to cool.
2.Add 2 teaspoons of oil to hot frying pan.
3.Cook bacon for 2 minutes until crisp. Drain and chop. Toss lettuce leaves with chicken, bacon and boiled eggs.
4.To make dressing; in a jug, whisk together olive oil, lemon juice, red-wine vinegar, anchovies, garlic and Tabasco sauce. Use a hand blender for a smoother result. Season to taste.
5.Drizzle salad with dressing, top with croutons and parmesan. Serve straight away.
