Nici Wickes’ mum is a biscuit and cookie queen, and this Easter egg biscuit recipe is a bit of fun for Easter. They’re easy, delicious and perfect for making with the kids. We challenge you to eat only one!

Method
Preheat oven to 180°C. Line a baking tray with baking paper.
In a bowl, cream the butter and sugar with a hand beater. Add the egg and beat for 1 minute. Stir in the flour and baking powder.
Use a rolling pin to roughly crush 2 packets of the eggs, then stir/knead into dough.
Roll into golf ball-sized rounds and spread out evenly on the tray, allowing 2cm between each as they’ll spread. Flatten slightly and press any remaining whole eggs into tops of each.
Bake for 7 minutes, then bring the tray out of the oven and bang it a few times on the benchtop to deflate the cookies (this gives them a lovely chewy texture). Return to the oven for a further 5-6 minutes or until golden.
Cool on the tray for 5 minutes, then transfer to a wire rack to cool completely.

- Makes 10-12. – Chocolate treats on top and in the cookie dough – now that’s a good Easter hunt!
