A classic Kiwi comfort meal, this is a great way to feed the family a budget-friendly, hearty dinner. If beef mince is expensive, look at alternative meat options that may be cheaper – NZ pork mince often can be an affordable alternative as well as packing a punch in extra flavour to this dish. We’ve used frozen peas in this recipe but any frozen veg works great in this dish, and adding a little extra can help stretch the meal too.
Serve with your favourite carb – rice and noodles are suggested for this dish but mashed potatoes are wonderful too!
Ingredients
Method
In a large frying pan heat oil over medium heat. Add onion and garlic cooking for 2 or 3 minutes.
Add mince and cook until browned and cooked through. Add curry powder and stir through.
Add chicken noodle soup and water, cook for 2 minutes.
Add cabbage and peas and let the cabbage wilt. Season with salt and pepper.
Garnish with parsley, a squeeze of lemon and serve hot on a bed of rice or noodles.
When browning mince, a fork is the perfect utensil to use for breaking up the clumps. A mince masher is a very handy tool too!
Note
Keep an eye out for specials and buy in bulk if you can. Pork mince is a fantastic alternative as it has so much flavour, and chicken mince is a good option if you are watching your calorie intake. If you are vegetarian, any legumes or lentils would work well in this recipe.
We love mince for the convenience in this recipe – you could swap this for any meat but be mindful of the cooking time taking longer. Leftover meat would work well for this too.
