Method
1.In a bowl, combine tomato, red onion, basil and balsamic vinegar. Season to taste.
2.Grill or toast bread until golden. While still hot, rub one side of each slice with garlic.
3.Arrange slices on a platter and top with tomato mixture and spoonfuls of ricotta. Sprinkle with capers. Season and serve.
