1.Cook noodles in a large saucepan of boiling salted water for 4-5 minutes or until tender. Drain and set aside. Coarsely chop half the coriander; reserve remainder.
2.Whisk mirin, soy sauce, fish sauce and half the oil in a medium bowl. Transfer half the dressing to a large bowl; add wasabi and noodles. Toss to combine. Add chopped coriander and fish to other half of dressing.
3.Heat remaining oil in a large frying pan over moderately high heat. Add fish; cook for 3 minutes each side or until cooked.
4.Add carrot, cucumber, sprouts and remaining coriander leaves to noodle mixture; toss to combine. Serve fish on top of noodle salad.
Wasabi is a paste made from horseradish. It’s usually sold in tubes in the Asian food section of supermarkets. You can use rice noodle sticks instead of soba; soak noodles in boiling water to soften.
