Ginger dressing
Method
1.Combine carrot and beetroot in a medium serving bowl. Add coriander and peanuts.
2.Microwave pappadums, all at once, on High (100%) for 1 minute or until puffed. Break into shards and add to the salad.
3.Make ginger dressing by whisking oil, juice, ginger, chilli and garlic in a small bowl. Drizzle dressing over salad; toss lightly to combine. Spoon into radicchio leaves. Serve.
Add fried noodles instead of pappadums.
