Method

Turkey and vegetable pies

1.Preheat oven to hot, 200°C. Lightly grease a 12-cup muffin pan.
2.In a large bowl, combine turkey, breadcrumbs, vegetables, sauce, coriander, egg, oil and chilli. Season to taste; mix well.
3.Using a 12cm round cutter, cut 12 circles from pastry sheets. Press into recesses of pan.
4.Divide turkey mixture among pastry cases. Sprinkle each with cheese.
5.Bake pies 15-20 minutes, until lightly browned and cooked through.

It is easier to handle pastry if it is only partially thawed.
