Tuna salad is a perennial lunch time favourite. This simple recipe includes beans and nuts for a super nutritional kick. If you're taking it to work, store dressing in a small airtight container and add just before serving.
1.Cook green beans in a saucepan of salted boiling water for 1-2 minutes, until bright green and just tender. Drain and rinse under cold water, then drain again.
2.Place green beans in a large bowl. Add cannellini beans, onion, tomato and walnuts. Drain tuna well and discard oil. Flake tuna into large chunks. Add to bowl.
3.Whisk together oil, vinegar, sugar, salt and pepper to taste in a small bowl. Pour dressing over salad and toss to combine.
