1.Bring a saucepan of salted water to the boil. Cook noodles 5 minutes, or until tender. Drain; transfer to a large bowl.
2.Meanwhile, place tofu in a shallow dish. Drizzle with teriyaki sauce. Stand 5 minutes. Remove tofu from sauce. Add sauce to noodles.
3.Heat half the oil in a non-stick frying pan over moderately high heat. Cook tofu, in batches, 1 minute each side, or until golden. Transfer to a heatproof plate to keep warm.
4.Heat remaining oil in pan over moderately high heat. Add ginger, snow peas and broccoli. Cook, stirring, 2 minutes or until just tender. Add onion, vegetables and tofu to noodles; toss to combine. Serve.
