Method

1.Select eight large lettuce leaves and trim with scissors, if necessary. Place in a large bowl filled with iced water, until crisp.
2.Heat oil in a wok on high. Stir-fry green onion and ginger for 1-2 minutes, until fragrant. Add pork mince and cook for 5 minutes, stirring to break up any lumps, until cooked through. Add oyster sauce, soy sauce and sesame oil and continue to stir-fry for another 2-3 minutes. Transfer immediately to a serving bowl.
3.To serve, spoon pork mixture into each lettuce leaf, top with beansprouts and coriander. To eat, fold over leaves to enclose filling.
