1.Preheat oven to 220°C/200°C fan forced. Heat 1 tablespoon of oil in a saucepan over moderate heat. Add onion and sliced garlic, cook and stir, 3 minutes, or until soft. Add mussels, wine and stock. Cover and bring to a simmer. Simmer, 5 minutes, or until mussels open. Stir in capers and parsley. Remove from heat.
2.Meanwhile, preheat an oven-grill to high. Cut remaining garlic in half, then rub cut side of garlic over both sides of bread. Drizzle bread with remaining oil. Grill, 1 minute each side, or until golden.
3.Serve mussels with garlic toast and salad, if desired.
