Ingredients

Method

1.Preheat oven to hot, 200°C. Toss kumara in olive oil. Place in a baking dish. Season to taste. Bake for 15-20 minutes, until tender.
2.In a large bowl, combine mesclun, eggs and prosciutto. Top with kumara.
3.Meanwhile, place parmesan, yolks, vinegar, worcestershire sauce, garlic and tabasco in small bowl of a food processor. Process until smooth.
4.Gradually add olive oil, processing until combined. Season to taste. Drizzle over salad just before serving.
