Sausage fried rice

Quick and easy sausage fried rice recipe that is extremely delicious and can be on the table in less than 15 minutes. The best way to make the most of leftover cooked rice.

Method

1.Heat half the oil in a large frying pan or wok over high heat; swirl to coat surface. Add egg; swirl pan to coat surface. Cook, without stirring, for 1-2 minutes or until just set. Transfer omelet to a heatproof board. Roll up into a log; slice thinly. Set aside.
2.Reduce heat to moderate. Heat remaining oil in pan. Add chipolatas. Cook and turn for 3-5 minutes or until browned. Transfer to a heatproof board. Thickly slice. Return sliced chipolatas to pan. Cook and stir for 1-2 minutes or until cooked.
3.Add frozen vegetables to pan. Cook and stir for 3-4 minutes or until heated. Add rice and half the onion. Cook and stir for 2 minutes. Add sauces. Cook and stir for 1 minute more. Serve rice topped with omelet and remaining onion.

You’ll need to cook 1 1/4 cups long-grain white rice.
