salami, potato and basil



1.Preheat oven to moderate oven 180°C (160°C fan-forced).
2.Grease deep 20cm-round cake pan, line base and side with baking paper. Boil, steam or microwave 2 medium thinly sliced potatoes until just tender
3.Drain, cool. Cook salami in small heated frying pan, stirring, until salami is browned all over, drain on absorbent paper
4.Layer half of the potato over base of prepared pan, top with half of the salami. Repeat with remaining potato and salami
5.Combine beaten eggs, cream, green onions and finely shredded fresh basil in a bowl, pour over potato mixture
6.Bake in moderate oven 30 minutes or until firm

frittata can be cooked on top of the stove, in a medium lightly oiled slightlysided frying pan, cook on low heat, uncovered, until almost set, then brown frittata under a preheated grill Frittata can be served hot or cold
