Ingredients: Prosciutto-wrapped melon; 1/2 medium_piece rockmelon (850g); 12 slice (180g) prosciutto; Vinaigrette; 1 tablespoon red wine vinegar; 1/4 cup (60ml) olive oil; 1/2 clove garlic, crushed; 1/4 teaspoon sugar; 1 teaspoon flat-leaf parsley, fresh, finely chopped; 1 teaspoon oregano, fresh, finely chopped

Prosciutto-wrapped melon

1/2 medium_piece rockmelon (850g)

12 slice (180g) prosciutto

Vinaigrette

1 tablespoon red wine vinegar

1/4 cup (60ml) olive oil

1/2 clove garlic, crushed

1/4 teaspoon sugar

1 teaspoon flat-leaf parsley, fresh, finely chopped

1 teaspoon oregano, fresh, finely chopped

Method

1.Peel and seed rockmelon; cut into 12 slices. Wrap a slice of prosciutto around each rockmelon slice.

2.Combine remaining ingredients in screw- top jar; shake well.

3.Drizzle vinaigrette over rockmelon; serve with mesclun, if desired.
