Method
1.Cook somen noodles in a large saucepan of boiling water following packet instructions, until tender. Drain well.
2.Meanwhile, combine water and miso in a medium saucepan. Bring to the boil on high.
3.Add prawns. Simmer, 2-3 minutes, until prawns change colour and are cooked through.
4.Divide noodles, tofu and prawns between serving bowls. Ladle hot miso soup over noodles. Scatter with green onions to serve.
Serve with lime wedges, or try adding some baby spinach leaves to broth before serving, if you like.
