Mustard and caper mayonnaise

There's no need to spend hours cooking with this simple zesty mayonnaise. Dill, garlic and mustard add to this smooth, flavoursome sauce that will make any meal pop.

Method

1.Process yolks, lemon juice and garlic until smooth. Combine oils in a jug. With motor running, gradually add oils in a thin steady stream until combined and mixture thickens.
2.Transfer mayonnaise to a bowl; add mustard, capers, dill and zest. Stir until well combined. Season to taste with salt. (If the mayonnaise is too thick, whisk in 1-2 tablespoons water.)
3.Arrange salad and prawns on plates. Serve with sauce.
