1.Preheat oven to 180°C (160°C fan-forced). Microwave tortillas on high 30 seconds, or until just softened. Spray tortillas with oil; press into six 3/4-cup texas muffin trays. Bake 5 minutes, or until crisp and golden.
2.Meanwhile, combine mince, garlic and oregano in a medium bowl. Season. Roll 2 teaspoons mince mixture into 24 balls.
3.Heat oil in a large frying pan over moderately high heat. Add meatballs. Cook, turning, 5 minutes, or until browned and cooked. Add capsicum to pan. Cook, stirring, 2 minutes, or until softened. Add sauce and 1/2 cup water; simmer until thick.
4.Fill tortilla baskets with meatball mixture. Top with cheese, tomato and avocado. Serve with salad and lemon.
You can prepare this several hours ahead. Store baskets in an airtight container and meatballs in the fridge; warm before serving. To save time, you can use bought meatballs.
Note
