Method
1.Lightly grease 3 pizza trays. Sprinkle yeast over combined water and oil and set aside 5 minutes, until foamy. Silt flour and salt together in a bowl.
2.Pour yeast mixture into flour, then mix to a soft dough, prove and punch. Preheat oven to 220°C.
3.Divide dough into three. Press or roll each out to form 3 x 30cm circles. Place bases on trays.
4.Spread with sauce, and top with pancetta and mozzarella. Bake for 10-15 minutes, until golden and crisp. Top with rocket. Drizzle with a little olive oil, if desired.
If you have a pizza stone, use that.
