1.Heat oil in a small, heavy-based saucepan on medium.
2.Add mustard seeds. Just as they begin to pop, add ginger, chilli and curry leaves; cook 1-2 minutes, until fragrant. Set aside to cool completely.
3.Rub turmeric into both sides of tuna steaks. Place in a shallow bowl and pour over flavoured oil. Cover; refrigerate 1 hour to marinate.
4.Preheat a char-grill or barbecue plate on high. Cook tuna 2 minutes each side, or until cooked to your liking. Scatter with combined onion and coriander; serve with rice.
lf you feel like a change, try walnut, macadamia or hazelnut oil in place of the neutral peanut oil.
