Method

1.Soak noodles in boiling water in a large heatproof bowl for 5 minutes; stir to separate strands, then drain.
2.Place tofu, soy sauce, honey and juice in a medium bowl; turn to coat. Stand tofu for 5 minutes, then drain, reserving marinade.
3.Heat a wok or large frying pan over high heat. Add oil; swirl to coat surface. Add tofu; stir-fry for 2 minutes or until golden and crisp. Using a slotted spoon, transfer to a heatproof plate, cover to keep warm. Add onion and ginger; stir-fry for 1 minute or until just soft. Add choy sum; stir-fry for 1 minute or until just wilted. Add noodles and reserved marinade; stir-fry for 1 minute more or until heated. Remove wok from heat. Add tomato; toss to combine. Spoon noodles onto serving plates, then top with tofu. Serve.

Gluten free? Use tamari (wheat-free soy sauce) instead of soy sauce and use gluten-free rice noodles instead of hokkien. Make ahead: Marinate tofu a day ahead. Cover, then refrigerate.
