Ingredients: 2 sheets frozen 25% reduced-fat puff pastry, thawed; 1/4 cup sun-dried tomato pesto; 75 gram sliced mild salami; 100 gram shaved ham; 6 button mushrooms, thinly sliced; 1/2 cup roasted red capsicum strips; 1/3 cup pitted kalamata olives, halved lengthwise; 1 1/2 cup grated reduced-fat mozzarella cheese; 1/3 cup small basil leaves; mixed salad, to serve

Ingredients

2 sheets frozen 25% reduced-fat puff pastry, thawed

1/4 cup sun-dried tomato pesto

75 gram sliced mild salami

100 gram shaved ham

6 button mushrooms, thinly sliced

1/2 cup roasted red capsicum strips

1/3 cup pitted kalamata olives, halved lengthwise

1 1/2 cup grated reduced-fat mozzarella cheese

1/3 cup small basil leaves

mixed salad, to serve

Method

1.Preheat oven to 200°C/180°C fan forced. Line 2 large baking trays with baking paper. Place pastry squares on prepared trays. Spread pesto over pastry, leaving a 2cm border. Roll up edges to make 2 round pizzas.

2.Divide salami, ham, mushroom, capsicum and olives over pastry; top with mozzarella. Bake for 25 minutes or until pastry is golden and crisp. Top with basil. Serve with salad.
