Method
1.Heat half the oil in a large frying pan on high.
2.Saute bacon and onion 2-3 minutes, until onion is tender. Transfer to a bowl to cool.
3.Add mince, mayonnaise and celery to bowl; season to taste. Form mixture into 4 even-sized, flattened patties; chill 20 minutes.
4.Heat remaining oil in same frying pan on high.
5.Cook patties 3-4 minutes each side, until golden and cooked through. Drain on paper towel.
6.Top bottom half of rolls with salad leaves, capsicum, patties and avocado. Top with remaining roll half.
7.Serve with sauce of choice and hot chips.
