1.Spray a frying pan with cooking oil. Heat on medium. Saute onion 2-3 minutes, until soft. Transfer to a bowl with 1/4 cup of the chickpeas.
2.In a food processor, blend remaining chickpeas, parsley, flour and egg, until smooth. Season to taste. Stir into onion mixture; chill.
3.Wipe out frying pan with a paper towel. Spray with oil. Heat on medium. Add 1/4-cup measures of mixture, flattening with a spatula. Cook 2-3 minutes each side, until crisp and golden.
4.Spread base of rolls with cream cheese. Top with patties, capsicum and alfalfa. Serve with top of roll.
Other drained beans or lentils may be used in place of chickpeas, if desired.
