Chicken tenderloins with mustard and snow-pea sprouts
1.In a bowl, combine orange juice, coriander, garlic and paprika. Add tenderloins, tossing to coat; season to taste. Set aside.
2.Preheat a char-grill or barbecue plate on high.
3.In a bowl, gently toss rocket, sprouts, capsicum and avocado.
4.Char-grill chicken 2-3 minutes each side, until cooked through. Slice thickly.
5.Meanwhile, to make mustard dressing, whisk together all ingredients in a jug.
6.Serve chicken with salad. Drizzle with mustard dressing; sprinkle with pine nuts.
