Method

1.Preheat oven to 180°C (160°C fan-forced). Line an oven tray with foil.
2.Arrange bread on tray and sprinkle with parmesan. Bake for 4-5 minutes or until golden. Remove from oven; cool. Break sourdough crisps into bite-size pieces.
3.DRESSING: Combine all ingredients in a small bowl. Season to taste.
4.Finely shred 4 large outer lettuce leaves. Combine shredded lettuce with chicken, figs, dressing and sourdough crisps in a bowl. Arrange on baby cos lettuce leaves, and top with extra cheese, to serve.

You can add a finely chopped hard boiled egg, if you like.
