Beef rissoles with potatoes and coleslaw

These delicious beef meatballs are packed full of flavour and are perfect served with crispy fried potatoes and a creamy, zesty coleslaw made with fresh cabbage and mayonnaise.

Method

1.Place potatoes in a microwave-safe bowl with a little water. Cover with plastic wrap. Microwave on high 6-7 minutes, or until just tender. Rinse in cold water and drain well.
2.In a large bowl, combine mince, onion, breadcrumbs, herbs, garlic, sauce and egg. Season to taste. Shape mixture into patties. Chill.
3.Heat half oil in a large frying pan on high. Cook potatoes 8-10 minutes, turning, until golden and crisp. Drain on paper towel. Season to taste. Keep warm.
4.Heat remaining oil in same pan on high. Cook rissoles 4-5 minutes each side until cooked through.
5.To make coleslaw: In a large bowl, combine all ingredients. Season to taste. Serve rissoles with potatoes and coleslaw salad.
