Method
1.Make herb butter: Blend or process ingredients until smooth. Place on piece of plastic wrap; shape into a rectangular block. Wrap butter mixture tightly in plastic wrap. Freeze until just firm; remove 10 minutes before serving.
2.Meanwhile, boil, steam or microwave potato until tender; drain. Mash potato in large bowl with butter and sour cream until smooth; cover to keep warm.
3.Cook lamb on heated oiled grill plate (or grill or barbecue) until browned both sides and cooked as desired. Serve lamb with mash and your herb butter.
