1.Thread capsicum, beef, bacon and onion onto 12 skewers. Spray with oil. Combine vinegar and mustard in a small bowl. Brush evenly over skewers.
2.Preheat a lightly oiled barbecue grill to moderate. Add skewers; cook and turn for 10-12 minutes for medium or until beef is cooked to your liking. Transfer beef to a heatproof plate. Cover with foil; rest for 5 minutes.
3.Meanwhile, spray both sides of bread with oil. Cook for 1-2 minutes each side or until browned.
4.Place bread on plates. Top with spinach and skewers. Serve with lemon wedges.
You can prepare skewers up to 8 hours ahead of time; store in an airtight container in fridge.
