Filo salmon quiche

Made with golden, crumbly pastry, these delicious flaked salmon and brie quiches are wonderfully light and tasty. Packed full of nutrients and wonderful flavours, this savoury dish can be enjoyed any time of the day.

Ingredients

Method

1.Preheat oven to 180°C (160°C fan-forced). Spray 8 small (11cm) quiche pans with olive oil spray.
2.Spray 4 sheets of filo pastry with olive oil spray and layer together. Cut into 4 squares and press into 4 pans. Repeat with another 4 sheets of pastry and remaining pans. Divide salmon, brie, onions and tasty cheese into pans. Arrange on a baking tray.
3.Whisk together eggs and milk in a jug, season to taste and pour over salmon. Bake for 20-25 minutes, or until golden and firm. Serve hot topped with salad leaves.
