Method
1.Preheat oven to moderate, 180°C (160°C fan-forced). Grease a 20cm (base diameter) round cake pan; line base and side with baking paper. Place pan on an oven tray.
2.Place kumara in a large, microwave-safe bowl; cover with plastic wrap. Microwave on high (100%) 3 minutes, or until just tender. Stand 5 minutes; drain.
3.Meanwhile, heat a large, non-stick frying pan over moderately high heat. Add chorizo; cook, turning, 2-3 minutes, or until crisp. Drain on paper towels.
4.Arrange kumara over base of prepared pan. Top with a layer of chorizo. Top with peas and 3/4 cup cheese.
5.Whisk eggs and cream in a large jug; season. Pour into pan; stand 5 minutes. Top with remaining cheese.
6.Bake 40-45 minutes, or until golden brown and set. Stand in pan 15 minutes. Remove from pan.
7.Cut into wedges to serve.
