1.Heat oil in a large frying pan over moderately high heat. Add onion; cook and stir for 3 minutes or until softened. Add curry paste; cook and stir for 1 minute or until fragrant. Add mince; cook and stir for 5 minutes, or until browned. Add carrot and beans; cook and stir for 3 minutes or until tender. Add rice, water and turmeric; cook and stir for 2 minutes or until heated.
2.Meanwhile, combine tomato, coriander and dressing in a bowl.
3.Serve pilaf topped with yoghurt and tomato salad.
Cook 1 1/3 cups long-grain white rice instead of using packaged microwave rice. Cooking time will vary.
