This is no ordinary lemon slice – the addition of oats to the base make for a deliciously chewy bite.

Preheat the oven to 180°C. Line an 18cm x 28cm pan with baking paper.
Place the flour, sugar, coconut and rolled oats into a large bowl. Stir together and make a well in the centre.
Heat the butter and golden syrup in a saucepan until just melted. Stir in the baking soda and boiling water. Pour into the dry ingredients and quickly mix together.
Press the mixture into the prepared baking pan, smoothing down firmly with the back of a spoon. Bake for 20-25 minutes until golden. Set aside to cool.
To make the icing, mix the ingredients together until you have a spreadable consistency. Spread the icing over the cooled base. Sprinkle with the extra coconut, if you are using it, and leave to set before cutting into pieces.
Note
- You can also add chopped dried apricots or 1 teaspoon of ground ginger to the base mixture.
