Ingredients

8 slider buns

1 quantity whitebait fritters (see recipe below)

1/2 cup mayonnaise

juice and rind of 1 lemon

butter for spreading

watercress or baby rocket leaves

Method

Preheat oven to 150°C.

Check size of slider buns and trim to fit, then slice buns in half and keep warm in oven.

Prepare whitebait fritters as per recipe below.

Mix together mayonnaise with lemon juice and rind, then season to taste.

Remove slider buns from oven and spread with butter and lemon mayo. To serve, place a fritter on the base of each bun, then sprinkle over watercress. Top with the bun lid to finish.
