2.Line a baking dish with the flaky puff pastry, leaving a bit to overhang the sides. Freeze while you make the filling.
3.In a bowl, combine the turkey, sour cream and vegetables. Make a sauce by mixing the melted butter and flour together over a medium heat, before adding the wine and stock or water along with the gravy.
4.Season with salt and pepper and simmer for 5-7 minutes while stirring. It should be the consistency of thick gravy or a cheese sauce. Add to the turkey mixture.
Stuffing topping
5.To make the topping, rub the butter and oil into the breadcrumbs, along with the herbs and seasoning.
6.Spoon the filling into the pastry case, then top with the stuffing. Drizzle with olive oil and bake (on the heated oven tray) for 20-30 minutes or until the top is golden brown.
7.Serve with cranberry sauce (of course!) and salad.
