Method
Tuna, bacon and potato salad
1.Cook potatoes in a large saucepan of salted water for 10 minutes, until tender. Drain and cut in half.
2.Meanwhile, heat a non-stick frying pan on high. Cook bacon for 2 minutes each side, until crisp. Drain on paper towel. Tear into pieces.
3.Combine potatoes, bacon, rocket, olives and tuna in a serving bowl. Drizzle over anchovy dressing (method below), toss and serve.

4.Combine all ingredients and season.
In place of anchovies, you can flavour the dressing with a teaspoon of finely grated lemon rind instead.
