This delicious tofu patties recipe with Thai salsa makes for a perfect healthy summer lunch. Soft and tender on the inside while lightly crispy on the outside, and full of flavour!
1.Place beans, tofu, bread, onion, herbs, teriyaki , egg and garlic in a food processor; process until smooth. Add flour; blend again until combined.
2.Heat oil in a medium frying pan on high; place egg rings into pan. Spoon tofu mixture into egg rings; cook on medium heat 2-3 minutes each side, or until firm and golden. Drain on paper towel. Repeat process until all mixture is cooked.
3.To make thai salsa, combine all ingredients in a small bowl, tossing well.
4.Serve patties topped with salsa. Accompany with salad.
