Method
1.Combine soy sauce, fish sauce, garlic and sugar in a shallow glass or ceramic bowl. Add turkey; stir to coat. Cover; chill for 80 minutes.
2.Spray turkey with oil. Heat a large frying pan over high heat. Add turkey; cook for 8 minutes each side or until brown and cooked. Transfer to a heatproof plate. Cover turkey with foil; rest for 5 minutes. Slice turkey.
3.Spread bread with mayonnaise. Place 2 coriander sprigs in each roll. Top with lettuce. tomato. turkey and chilli. Drizzle with chilli sauce. Sprinkle with extra coriander. Serve.
Instead of turkey, you can use 2 x 250g chicken breast fillets. Cut in half horizontally to make 4 pieces. Omit chilli and serve drizzled with plum sauce.
